Huckleberry Ice Cream

Summer has FINALLY arrived in Oregon and it better not be a tease because I am fixing to make some huckleberry (or blueberry) ice-cream! I found this recipe from Country Living and I have to admit the pretty coloring got my attention first. I mean, what better way to start out the summer than making homemade ice cream. Time to drag out those ice-cream makers!

Ingredients:

2 cup(s) half-and-half
4 eggs
1/2 cup(s) sugar
1/4 teaspoon(s) salt
1 cup(s) whipping cream
1 teaspoon(s) vanilla extract
2 cup(s) huckleberries, or blueberries, blended with 3/4 cup sugar

Directions:

1 In a medium saucepan, whisk together half-and-half, eggs, sugar, and salt. Place pan over medium- high heat and whisk mixture until bubbly. Strain into a large bowl and cool; then whisk in cream, vanilla, and berries. Cover with plastic wrap and refrigerate until chilled, about 2 hours.

2. Pour mixture into ice-cream maker; process according to manufacturer instructions.

Enjoy!

What is a huckleberry??? Do you have those in Oregon..Maine is blueberry country.. Gotta admit..love the color! How fun to eat something blue!? I have to agree about Ice Cream..although I could eat it anytime of year and anyday...breakfast, lunch or dinner!!

People in New England eat more ice cream than any where else in the USA. I don't know why I missed so many entries on your blog? Where have i been? Loved that you have a little bed next to yours for your cat. We cat lovers can't help ourselves. Stay cool! Hugs, Kathleen

Yum!! I didn't get to post on your last post on the It's Complicated house ... I haven't seen the movie but oh, I love, love that house!!! Now I HAVE to see the movie. My first house (20 years ago) was a little cottage. We added on a bathroom and I wanted a clawfoot tub ... we looked everywhere (I didn't want to pay an arm and a leg) and finally found one at a local garage sale for $25! They are wonderful for baths but a pain for showers!!! :-) Puppy training is going okay ... getting better and better every day! Looks and sounds perfect on a hot day! I think it's been like 35 years since I made homemade ice cream, and that was with one of the old school types...took forever.

you should make your own. and you know you can add a few chunks of cheesecake or cream cream in there. YUM
