What do you do with a six pound zucchini and so thankful for the rescue of Chilean miners!

You make LOTS and LOTS of zucchini bread. Different versions of them! Different shapes! Have you ever seen such a big zucchini? My best friend Susan got this from a friend of hers and we made twelve zucchini loaves. I made a few with chocolate chips in them. You know me, gotta have my chocolate fix!






And last, I am so happy that the Chilean miners have finally been rescued! I have been watching every minute of it, crying after each one comes up. *sigh* It just reminds us all to cherish what we have in our lives, kiss those we love everyday and remember, in the day to day of life that we take for granted, we never know when it can come close to being taken away from us. We are all blessed with the families and friends we have. Let's try to show it to them everyday for the rest of our lives. :) xoxo

Since late last night we have been watching the BC broadcast live the first miner being pulled up and being hugged by the Chilean president.

It certainly is a time to celebrate and cherish this moment, especially since we have so very little good news about anything.

Congratulations to Susan and you for making 12 loaves and good to know that one at least has some chocolate in it.

We've been celebrating at work today, the rescue of the mine workers - such wonderful news!

You've reminded me to get going on my zucchini bread too - I also like chocolate chips in mine! Hope you are having a wonderful October!

Goodness! A zucch that big could be hollowed out and easily used as a canoe!

Thanks be that every last drop of miners was safely rescued from the depths! O how happy the world is that these brave hearts are once more warm and snuggly with their families.

Oh I remember having zucchini that big in my garden a couple years ago. They will get that big very quickly if you don't pick them! Someone in New England wrote a book on what to do with those large veggies! The only two I remember are a baseball bat and use them for target shooting!! It's a guy thing I think. Us women would prefer to cook them...just like you did! Good for you....did you freeze some or give them away? Sounds delicious with the chocolate chips. Oh I agree with you regarding the Chilean miners!! I was glued to the tv! A story like that brings an entire world together I think. I wish we had more uplifting stories like that. This world is so negative sometimes. Then it had to get spoiled by the miner and his mistress!! His poor wife...I felt bad for her. It did not distract from the happiness of the others though.

That's just what I did before we left on vacation! Baked tons of zuch bread/muffins and froze them. :)

We just got back from a 5-week vacay and I missed you and your sweetest kitties (esp Mr. Quincy, but don't tell Emma and Mocha!). xo
