Roasted Pumpkin Seeds


I know you all know this already BUT I thought I'd post a recipe to make your mouth water and inspire you to roast those seeds when you carve your pumpkin. The Fiberdoodles Halloween Blog Party continues!

Roasting Pumpkin Seeds

Preheat oven to 300.

Combine 1 T oil or melted butter plus ½ t salt per cup of seeds. If you like, you can add other spices like pepper, paprika, and/or garlic.

Toss seeds with oil mixture until well coated.

Spread evenly on a cookie sheet.

Bake until golden, about 30 minutes, stirring occasionally.

Let cool on paper towels and ENJOY!

Mmmm! We didn't grow pumpkins this year (or maybe we did but the vine borers killed them off)...either way, we don't have any pumpkins. :(

We'll try growing the hull-less seeds pumpkins again next year. I was so excited about those because we wouldn't have to shell them before cooking with them.

Hi Michelle, I'm alive. lol I never realized how much energy it takes to morph into the role of grandmother and to do last minute wedding details while working full time! Whew! My kids are coming at me from both directions hahaha

Thanks for stopping by, I appreciate it. I had my wedding post ready last night but then I lost the internet connection and hadn't saved it so I lost it all. Arrrrrrgh. Hopefully, I will have it up by the end of the evening. Part I. Also, I had lost ALL of the wedding and baby photos on my memory card, and was devastated. Sweet talked the photographer via email and he sent me a free recovery download and I got them all back. Hense what has been taking so long to get my post up. Love the pumpkin and chocolat chip bread, going to try that one tonight I think. :)
