Apple-Orange Cranberry Relish, Friends Thanksgiving and a House Full of Animals

A table ready for guests....

Today was our "friends" Thanksgiving and four of my closest friends came over to celebrate. :) It was a day of creative cooking, fun, laughter and some much needed relaxation. I'll be posting more later but OH MY GOD this cranberry relish is better than anything I've ever tasted. My mother made it several years ago and she sent me the recipe. It is so easy and you know how I like easy. :)








Apple-Orange Cranberry Relish Recipe

1/2 orange
2 cups(16fl oz) water
1 tart apple such as granny Smith, pippin or McIntosh
3 cups fresh cranberries
1/4 cups sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Squeeze the juice from the orange half and set the juice side. Remove the membrane from the inside of the orange shell and discard. Cut the shell into small diced pieces and put into the small saucepan with the water. Bring to a boil and cook 10 minutes. Drain and set aside. Peel, quarter and core apple, then chop into small pieces. place in a saucepan. Sort the cranberries, discarding any soft ones. Add to the apples along with the reserved diced orange peel, the reserved orange juice, the sugar, cinnamon and cloves. Bring to a boil, reduce the heat to a simmer and cover partially. Simmer gently, stirring occasionally, until the sauce has thickened, the apple is tender and cranberries have burst, 10-15 minutes. Transfer to a bowl and let cool before serving. Or cover and refrigerate; bring to room temperature before serving. Makes 3 1/2-4 cups

My girlfriend brought her three Cairn Terriers (actually she was sitting for one but they are all family) and two cats so we had a house of 3 dogs and 4 cats. Believe it or not it was quite calm....I mean take a look at this. Can you tell me if you've seen anything so sweet? Bella just wrapped herself around me. I am so blessed to have animals in my life like this.

OMG you are so lucky the animals were not high on something or else your house will need redecoration lol!

I think I will try to make the relish one day it look so delicious!

Looks Great!! I think the cranberry is so understated.. I love cranberry anything. I'm going to make some for my christmas dinner, but it's so easy I may not wait!

hahaha did you put an hour aside to do your blogging lol? My cat is slowly warming up to the lady hey I am not married so not my mother in law lolol! As you know nothing keeps my kitty away from treats all she has to do is give her a little and she will walk up to her lol.
