Homemade Corn Tortillas

I must be feeling good! I'm thinking of food. :) Tonight I thought I'd try my hand at homemade corn tortillas. They turned out pretty good to be honest. Okay, so they weren't perfectly round. I didn't have one of those fancy presses but they looked authentic, hand pressed and everything...made with love. Lol!

I couldn't fold them in half. I may have made them too thick so I made tostadas out of them! You don't see tomatoes on the tostada because I'm not crazy about fresh tomato. I know, I'm weird.
HOMEMADE CORN TORTILLAS
Combine two cups (loose measure) of Masa, 1/4 teaspoon salt, and 1 1/4 cups water. Mix thoroughly for about 2 minutes to form soft dough. If dough feels dry, add more water (one tablespoon at a time).
Directions for Tortillas: Divide dough into 16 equal balls. Cover with damp cloth to keep dough moist. Line a tortilla press with two sheets of thick plastic wrap. Place each ball between plastic and press until tortilla measures 5 to 6 inches in diameter. Carefully peel of plastic wrap. Preheat greased griddle skillet on medium high heat. Cook tortillas one at a time for about 1 minute on each side or until golden brown. Turn, then cook the second side for same 1 minute. Cover tortillas with cloth napkin to keep soft and warm.
Serve any way you want with chicken, beef, beans, etc. and enjoy!

Frank is getting into the Mexican cuisine. He wants to make tamales. He may see this recipe and try the tortillas. I'd rather sit back and let him do the cooking :-)

Brilliant Michelle, I have always shyed away from making these as I always thought you needed a tortilla press, now I feel I can try and make them as well. As you can not buy a corn tortilla in this country for love nor money, that really has inspired me now.
I have a question for you, I was leafing through a Country Living magazine from last summer in which I found an article about Pennington farms in Grants pass, Oregon. Is that anywhere near you? ( I have no real concept of distances in the US). It looks like a brilliant place, you can stay there as well, and they make the most brilliant baked goods! Just wondered it you knew it.

Looks soooo good. Yum yum avacado. Have you ever grown your own tomatoes? They taste so different than store bought ones. Try growing sweet 100 cherry tomatoes(you can grow them in a pot on your patio) and you just might like them. And if you don't you can give them to friends.
