Pies to End A Nice Long Weekend...

Well I'm at it again. I can't stop making these mini pies! Lol! This time, however, I made my own crust from scratch. To be more specific, the recipe came from the book my sis got me for my birthday, The Farmer's Wife Baking Cookbook! The pie dough is a very basic pie dough but still very yummy!







Crusts baked...

Okay, I did cheat with the pie filling. This is simply your instant chocolate pudding filling that you add milk to and whisk! I'm so impatient! Lol! I can't be stirring hot chocolate pudding over a hot stove in 90 degree weather! Could you? So yes, I cheated but the end result was still the same...CHOCOLATE!



Pie Crust (Plain pastry) (courtesy of Farmer's Wife Cookbook)

1/2 tsp. salt
1 1/2 c. sifted flour
1/2 c. butter/lard
3 or 4 tbsp. ice cold water

Add salt to flour and cut in shortening with a dough blender, sharp-tined fork, or finger tips, until pieces are size of small peas. Add a little water at a time, mixing with a fork lightly until it can be shaped into a ball. Divide dough and roll out 1 crust at a time. Avoid over handling the dough either in mixing it or in rolling out the crust. Work quickly, especially in warm weather so that fat doesn't melt. To bake single crusts, lay in pie tine quite loosely and prick well over bottom or fit over the bottom of an inverted tin. Bake in a hot oven at 450 degrees about 15-18 minutes (check periodically...until edges are browned).

Michelle - those look great! You have me craving chocolate-peanut butter pie. I'm horrible at making crust, but will have to give it a try. Shame I can't click on your photo and it would appear next to my keyboard. Wishful thinking :-)

First, I'm so jealous you can make a pie crust. I can't for the life of me. I cheat and use a pillsbury crust, unroll and bake! I love your background and I plan on taking the "what kind of horse" test. Have a great day and enjoy the sun and heat. Wish I was there!

God love you MIchelle, you can make pie crust! I can't, and neither can Tracey. It's the rolling, I can't seem to get right. I've given up, and now buy my crust all made at the supermarket. Cherry is my favorite! Hugs, Kathleen
