What do you do with leftover Rib Eye?

You make hash! Well sort of. My way. My best friends (Susan and Bryan) and I celebrated our birthdays together last night (we celebrate all month). Every year we go to this great, old fashioned, down home, better than Bobby Flay, cooking restaurant called Sayler's Old Country Kitchen. It's a wonderful establishment that has been around since the 40's (no wonder I go there) and we swear they have the best steak in town. They even bring you one of those relish trays. You know, the kind grandma used to put on the table before dinner...filled with olives, carrots, pickle, celery and those little baby corn thingies.

Anyhoo, since I couldn't eat all my Rib Eye, which by the way is my favorite kind of steak, I took it home for tonight! I chopped up the steak, took a couple of red potatoes and threw them in the microwave for about 3 minutes. Chopped up the cooked potatoes in small pieces, threw in a few mushrooms (and I mean a few you can barely see 'em) and pan fried it all together in butter! Oh YUM! Then in another pan I cracked one egg and fried it 'til it was happy and sunny. And voila! Can't beat breakfast for dinner! :)




And yes, I like my eggs "over hard." I tried to find some greenery to give it that final touch and make it look less plain but I couldn't..and the more I smelled that yummy goodness I just couldn't wait, so sorry, no pretties tonight. :) This beautiful plate was subsequently ravaged by my mouth.

I used to eat there every Sunday after church with the Pastor and his family when I was a little girl. I would have either the hamburger or chicken fried steak. -Sometimes fish and chips. I always loved the relish tray and that yummy sour cream mixture for the veggies and baked potatoes. Oh, yes and I always drank a Shirley Temple with extra cherries.

Our server was always Evelyn, who later became the manager over at the Beaverton location. Great Memories!

That looks so good! Where are the onions though? ;-)

I'm not very good at frying an egg, but am very good at scrambling one... Frank is the opposite, so it works out :-)

What?! You couldn't finish your rib-eye? Young lady, nobody likes a quitter. :-)

We'll have to have you up to our place to feast on rib-eyes and yummy things out of our garden.

Looks great Michelle! That is also my favorite use of left over steak. Hum, I have some left over London Broil, you've inspired my breakfast!

My favorite thing to make with left over steak is to dice it up(like you did) and cook in a skillet with a bit of extra virgin olive oil, sea salt, pepper, garlic and put on top of pasta with fresh parmesean and/or marinara sauce. It is yummy!

Looks good! Except I would leave out the mushrooms, maybe add some tomato and cook the egg over easy. The cool thing about this is that everyone can make it to their taste. Thanks for the idea!
