A Date With Chocolate Chip Cranberry Shortbread Cookies

There is nothing more comforting than a quiet evening at home with some exquisite and tempting cookies like these.....

Chocolate Chip Cranberry Shortbread Cookies

Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1 teaspoon vanilla
1 cup flour
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips
1/2 cup dried cranberries

Directions:

Preheat oven to 375 degrees. Beat butter and sugar until light and fluffy. Beat in vanilla and add flour and salt. Stir in chips and cranberries. Divide dough in half. Press each half into an ungreased 8 inch round pan. Bake 12 minutes or until edges are golden. Score each shortbread with sharp knife into 8 even wedges but do not cut all the way through. Leave in pans and cool on racks for 10 minutes. Invert onto racks and cool completely. Break into wedges.

I decided to just wing it and sort of drop them into rounds instead of pressing them in a pan. Either way it's great!

Wow, they look scrumptious, definitely some cookie baking in my house going on this weekend, I love cranberries and I love shortbread, so what is not to like.

And I also wanted to say to you, from your ghostly blog above: Hubby & I rented a house in the town we live in now (before we moved where we are now), and said house was built in 1892, was home to the first constable of our town, and his wife or one of his mistresses, was run over by the railroad tracks, and her spirit still is around that place, over by the barn, outside. Neighbors have seen her running around at night a few times, dressed in her nightgown. Some say she is still searching for her man, and appears to "stay" lost; not wanting to cross over. I've never seen her, and I tried; it's hard to convince me. But I wanted to share this with you because so many people have seen her, various types of people. Well, we lived there for 3 years and nothing. Wild huh?
