Cinnamon Spice Pumpkin Seeds


Here's another simple and classic recipe if you're going to carve that pumpkin this year. :)

Ingredients:

4 cups pumpkin seeds
1 teaspoon salt
1/2 teaspoon ground cinnamon
vegetable oil cooking spray

Directions:

Preheat the oven to 350 degrees. Grease a cookie sheet and spread the seeds out in an even layer. Lightly sprinkle with salt and cinnamon (use more if desired but don't go overboard). Bake for about 5 minutes, then stir the seeds. Season with salt and cinnamon again. Continue baking, stirring occasionally, for about 20 minutes, or until seeds are toasted. Of course you can always do this the traditional way and just sprinkle with salt!

Yum, yum...I'll be trying this when we grow hull-less seeds pumpkins again! This year, our one lone pumpkin plant died a premature death. :( Pumpkins are one of those things that we grow most years, but never buy at the store.

Hey sis,

Did you guys do decorate your pumpkins yet? Definitely roast the seeds when you do! I haven't done it in so long...I miss that childhood memory. :)

Funny enough, when our plants don't make it, we just live without. Luckily, the boys have never raised a fuss about it.
